Angelicas Vegan Nut Roast

Note to vegetarians. It’s even better with an egg.

Ingredients

  1. 1 onion – finely chopped
  2. 2 carrots – grated
  3. 2 celery stalks –¬† chopped¬† in a processor or grated then added to bowl.
  4. 2oz mushrooms – finely chopped
  5. 8oz walnuts – chopped
  6. 2oz lentils (cooked)
  7. 3oz fresh wholemeal breadcrumbs
  8. 4oz mashed potato
  9. 1 large can of tinned chopped tomatoes (drained)
  10. 1 teaspoon vegetable stock powder or stock cube
  11. 1 tablespoon peanut butter
  12. 1 heaped teaspoon of mild curry powder
  13. 1 teaspoon of mixed dried herbs
  14. 1 heaped teaspoon basil
  15. 1 teaspoon of minced garlic
  16. lots of freshly ground black pepper

Method

  • When all ingredients are amalgamated press into a loaf tin
    and bake in oven at 220c for approx. 35-45mins.
  • Keep checking. (If fan oven, reduce temperature by 10 degrees C)
  • Decorate with red onion rings and fresh parsley.
