Cheese Flan Without Eggs

Ingredients

  • Line a flan tin with shortcrust pastry
  • 1/2 lb of creamed mashed potato
  • 4oz of grated onion
  • 5-6oz of grated cheese

Method

  1. Mix together the potatoes onion and cheese with a little pepper.
  2. Spread over the pastry case and level.
  3. Decorate with slices of tomato and sprinkle with a little basil if liked.
  4. Bake in a moderate oven Gas 4, 180c, 350f for approx. 35 mins.

I used to make this at Hawes School where I was cook for many years.
