4 hard boiled eggs

6 oz cooked drained basmati rice

2 chopped spring onions Use the green tops only. You can use chives.

2-3 tablespoons of Hellmann’s mayonnaise

Freshly chopped parsley

Freshly ground black pepper
Method
- Mash the hard boiled eggs till well mashed.
- Stir in the mayonnaise, spring onions and black pepper.
- Fold in the rice and then finally add the chopped parsley.
Curried eggs make a lovely side dish to go with a salad or can be used as a main meal.
