Curried Egg

  • 4 hard boiled eggs
  • 6 oz cooked drained basmati rice
  • 2¬†chopped spring onions Use the green tops only. You can use chives.
  • 2-3 tablespoons of Hellmann’s mayonnaise
  • Freshly chopped parsley
  • Freshly ground black pepper


  1. Mash the hard boiled eggs till well mashed.
  2. Stir in the mayonnaise, spring onions and black pepper.
  3. Fold in the rice and then finally add the chopped parsley.

Curried eggs make a lovely side dish to go with a salad or can be used as a main meal.
